If you’ve never tried Korean chives, also known as buchu, you may want to add them to your shopping list. While they look similar to regular chives, Korean chives have wider, flatter leaves and a mild garlic flavor that’s less sharp than garlic cloves and more delicate than traditional chives.
A popular ingredient in Korean cuisine, buchu adds wonderful flavor to stir-fries, vegetable dishes, soups, dumpling fillings and grain bowls. They pair especially well with mushrooms, tofu, beans and other colorful vegetables, making them an easy addition to a whole-food, plant-based meal.
Like many leafy green vegetables, Korean chives provide vitamins and beneficial plant compounds while adding fresh flavor without the need for heavy sauces or extra fat. The simple ingredients can bring an ordinary dish to life.
