Happy Thankful Thursday!
It’s National Avocado Day and we’re celebrating the creamy, dreamy fruit that makes plant-based living feel downright indulgent.
Avocados aren’t just about guac (though, let’s be honest, that’s reason enough to love them). These green gems are packed with heart-healthy fats, fiber, potassium and vitamins that nourish you from the inside out. They’re nature’s butter, but with way more benefits.
Whether mashed on toast, blended into smoothies or diced into vibrant salads, avocados add richness and satisfaction to every bite, naturally and without any oil or dairy needed.
Today’s Challenge:
Celebrate National Avocado Day by adding a little avo-love to your plate. Try a new recipe or simply savor a perfectly ripe avocado with a sprinkle of sea salt and a squeeze of lime. Simple. Perfect.
Here’s to the fruit that keeps it creamy, clean and plant-powered.
And remember, avocado oil is not a healthy food. No oil is a health food. Just eat the avocado.
Enjoy every bite.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
