Naturally striped and slightly sweeter than traditional red beets, Chioggias bring instant visual interest to winter plates without needing anything fancy. Their mild flavor and striking pattern make them feel special, even when prepared simply.
How I love to use them:
- Thinly sliced raw for salads and citrus pairings
- Simply roasted to highlight their natural sweetness
- Layered onto winter plates for color, contrast and texture
