Fridays are all about comfort food favorites and today I’m sharing one of mine, my chickpea “chick’n” salad. It’s creamy, satisfying and packs all the flavor of the classic version, without a shred of actual chicken.
Here’s the truth, chickpeas are loaded with plant-based protein, fiber and minerals that help you stay strong and energized. You don’t need animal protein to survive, heal or feel nourished, nature already provides everything you need in these humble little legumes.
This dish has quickly become a go-to in my kitchen. It works beautifully in a sandwich, wrapped in crisp lettuce leaves or simply scooped up with whole-grain crackers. Every bite is hearty, plant-based goodness that always leaves me feeling light yet full.
