This Savory Saturday, I’m warming things up with a bowl of pure comfort, my Minestrone Soup.
It’s one of those recipes that’s hearty, nourishing and absolutely gorgeous, packed with colorful veggies, beans and herbs that make every spoonful feel like a hug in a bowl. Whether you’re winding down from a busy week or craving something wholesome and homemade, this soup hits the spot.
It pairs nicely with a piece of toasted whole-grain bread.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
