Packing food before leaving home is a simple habit I’m thankful for, whether I’m heading out on a long road trip, taking a short drive or just running errands.
When we leave home without something to eat, hunger can sneak up on us. Then we may find ourselves stopping for whatever food is available, even when we would rather enjoy something nourishing and homemade.
A little planning can make all the difference. Pack a grain bowl, bean salad, fresh fruit, cut vegetables or another favorite meal in a reusable container. You don’t always need to heat your food, either!
Cold meals can be just as delicious, including my Chickpea ‘Chick’n’ Salad, Tofu Eggless Salad or even my bean burrito. A burrito is perfectly fine cold and you could say it’s a “bur-Rita”! Ha ha!
If you do want a warm meal, many gas stations have microwaves available, so you can heat your packed food while you’re on the road.
This week, I’m thankful for the simple ability to prepare food at home and bring it along. It helps me stay satisfied, save money and continue enjoying healthy, plant-based meals wherever I go.
What’s your favorite meal or snack to pack when you’re away from home?

I started out over a decade ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
