This week, I’m highlighting patty pan squash.
With their unique flying-saucer shape and cheerful colors, patty pan squash are one of the most fun vegetables to spot at farmers markets this time of year. But they’re more than just eye-catching, they’re also tender, versatile and delicious.
Patty pan squash have a mild, slightly buttery flavor that works beautifully in a variety of dishes. Their delicate taste makes them a wonderful canvas for fresh herbs, garlic, onions and other bold plant-based seasonings.
One of my favorite ways to enjoy them is simply sliced and grilled until tender. They’re also delicious roasted until lightly caramelized or stuffed with grains and vegetables for a satisfying seasonal meal.
Like other summer squash, patty pan squash provide fiber and valuable nutrients while adding color, texture and variety to your plate.
If you come across these little squash at your local farmers market or grocery store, don’t pass them by. They’re a fun and tasty way to enjoy the abundance of the season.
