Today’s seasonal feature is all about simple summer ingredients coming together in a really fresh and flavorful way.
Peach & Arugula Salad
Fresh juicy peaches paired with peppery arugula, pickled red onion, raw pecans and a light poppyseed dressing. Sweet, peppery, bright and perfect for summer.
Peaches are beautifully in season right now and pair especially well with fresh greens this time of year. The sweetness of the peaches balances the peppery bite of the arugula while the pickled red onion adds just the right tangy contrast. Raw pecans bring texture, crunch and richness without overpowering the salad.
For an extra layer of flavor, try lightly grilling the peaches first, then letting them cool before adding them to the salad. The smoky sweetness takes this salad to the next level.
The poppyseed dressing ties everything together beautifully with its slightly sweet flavor along with the Dijon and shallot notes. If you’d like the poppyseed dressing recipe, simply reply to this email and I’ll gladly send it to you.
This salad feels elegant enough for entertaining but simple enough for an easy lunch or light summer dinner.
Peach Tip
When storing fresh peaches while they ripen, try to keep them in a single layer without touching too much. As peaches soften and become juicier, stacking them can create pressure spots that lead to bruising.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
