Celebrate the Fourth of July weekend with a festive dessert made from nature’s sweetest ingredients. Creamy banana nice cream layered with fresh berries creates a colorful treat that’s naturally sweet, refreshing and perfect for this weekend’s celebration, whether you’re hosting a backyard barbecue or simply enjoying time with family and friends.
Red, White & Blue Nice Cream Parfait
Makes: 4–6 servings
White “Ice Cream”
- 1 (14-ounce) package firm silken tofu
- ½ cup raw cashews, soaked overnight, rinsed and drained
- 2 frozen bananas
- 2–3 Medjool dates, pitted
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- Pinch of sea salt
- 2–4 tablespoons water, if needed for blending
Fruit Layers
- 1 cup fresh blueberries
- 1 cup fresh raspberries, sliced strawberries or pitted cherries
Instructions
- Blend the tofu, soaked cashews, frozen bananas, dates, vanilla, lemon juice and sea salt until completely smooth and thick. Add just enough water, if needed, to help blend.
- If the mixture becomes too soft, freeze it for 20–30 minutes before assembling.
- Spoon a layer of the white “ice cream” into clear serving glasses.
- Add a layer of your choice of raspberries, sliced strawberries or pitted cherries.
- Add another layer of the white “ice cream.”
- Top with a layer of fresh blueberries. Repeat the layers, if desired.
