Savory Herb-Infused Roasted Carrots
Ingredients:
- 6-8 medium carrots, peeled and cut into sticks or rounds
- A splash or two of water (to toss the carrots)
- 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
- 1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried rosemary)
- 1 garlic clove, minced
- 1/2 tsp smoked paprika (optional, for a smoky flavor)
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the carrots: Peel and cut the carrots into sticks or rounds, depending on your preference. The smaller they are, the quicker they’ll cook!
- Season the carrots: In a bowl, toss the carrots with a splash of water, garlic, thyme, rosemary, smoked paprika (if using), salt and pepper until evenly coated.
- Roast: Spread the carrots out in a single layer on the prepared baking sheet. Roast for about 25-30 minutes, flipping them halfway through, until they are golden and tender.
- Serve: Once roasted, sprinkle fresh parsley over the carrots and serve with a squeeze of lemon for an extra burst of flavor.
