Savory Herb-Infused Roasted Carrots

Ingredients:

  • 6-8 medium carrots, peeled and cut into sticks or rounds
  • A splash or two of water (to toss the carrots)
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried rosemary)
  • 1 garlic clove, minced
  • 1/2 tsp smoked paprika (optional, for a smoky flavor)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the carrots: Peel and cut the carrots into sticks or rounds, depending on your preference. The smaller they are, the quicker they’ll cook!
  3. Season the carrots: In a bowl, toss the carrots with a splash of water, garlic, thyme, rosemary, smoked paprika (if using), salt and pepper until evenly coated.
  4. Roast: Spread the carrots out in a single layer on the prepared baking sheet. Roast for about 25-30 minutes, flipping them halfway through, until they are golden and tender.
  5. Serve: Once roasted, sprinkle fresh parsley over the carrots and serve with a squeeze of lemon for an extra burst of flavor.
