Shishito peppers have been enjoyed in Japan for generations and are believed to have originated from Spanish pepper varieties introduced centuries ago. Today, they’re a popular summer favorite, known for their thin skin, mild flavor and quick cooking time.

These little peppers blister beautifully on the grill, becoming tender, smoky and full of flavor in just a few minutes. Most are sweet and mild, but every now and then you’ll come across one with a surprising kick, that’s part of the fun!

Simply grill them until lightly charred and tender, then finish with a squeeze of fresh lemon juice for an easy seasonal side dish.
