Ingredients:
- 1 can young green jackfruit (rinsed, drained and shredded)
- 1/2 cup homemade or store-bought oil-free BBQ sauce
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp apple cider vinegar
- Salt & pepper to taste
- Whole wheat tortillas or lettuce wraps
- Sliced red onion, shredded cabbage and fresh cilantro for topping
Instructions:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix jackfruit with BBQ sauce, spices and vinegar.
- Spread the jackfruit on the baking sheet and bake for 20 minutes, stirring halfway through.
- Once tender, use a fork to shred the jackfruit further.
- Serve in a tortilla or lettuce wrap, topped with onions, cabbage and cilantro.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
