What if your favorite tater tots got a fall-inspired makeover?
These Sweet Potato “Tater Tots” are made with shredded sweet potato, simple seasonings and baked until crisp on the outside and tender inside, all without added oil.
Sweet Potato “Tater Tots”
Ingredients~
- 2 medium sweet potatoes, peeled and shredded
- ¼ cup whole-wheat breadcrumbs
- 2 tablespoons finely chopped green onion
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon onion powder
- ¼ teaspoon salt or to taste
- Freshly ground black pepper, to taste
Instruction~
Preheat oven to 425°F and line a baking sheet with parchment paper.
Place the shredded sweet potato in a clean kitchen towel and squeeze out as much moisture as possible. Transfer to a bowl and mix with the breadcrumbs, green onion, garlic powder, smoked paprika, onion powder, salt and pepper.
Take small portions of the mixture and shape them into little tots, pressing firmly so they hold together. Place on the prepared baking sheet with a little space between each one.
Bake for about 25–30 minutes, carefully turning halfway through, until golden and crisp on the outside.
Serve warm with your favorite oil-free dipping sauce.
