What if your toast didn’t need bread at all?
This week’s Tasty Tuesday is all about a simple twist, sweet potato toast with berry mash. It’s naturally sweet, satisfying and feels like a treat while keeping things light and energizing.
Roasted sweet potato slices create the perfect soft, slightly caramelized base, while mashed berries add a fresh, juicy burst of flavor on top.
Recipe (Serves 2)
Ingredients:
- 1 large sweet potato
- 1 cup fresh berries (strawberries, blueberries or raspberries)
- 1–2 tbsp water (optional, for mashing)
Instructions:
- Preheat oven to 400°F (200°C).
- Slice the sweet potato lengthwise into ¼-inch thick slices.
- Place slices on a parchment lined baking tray and roast for 20–25 minutes, flipping halfway, until tender.
- In a bowl, mash the berries with a fork until slightly chunky (add a little water if needed).
- Spoon the berry mash over warm sweet potato slices.
It’s simple, naturally sweet and perfect for a quick, nourishing bite.
