Shallots, onions and garlic are three staples I always like to have in my kitchen. Their dry outer layers help protect them during storage, allowing them to last much longer than many fresh ingredients when kept in a cool, dry place.
Beyond their convenience, these simple ingredients are wonderful for building flavor. I don’t rely on store-bought vegetable broth to add depth to my meals. Instead, I often start with this trio, letting shallots, onions and garlic create a flavorful foundation for soups, beans, grains, vegetables and so many other dishes.
Keeping these three staples on hand means a flavorful meal can start with just a few simple ingredients. They may not look exciting sitting on the counter, but they can make a remarkable difference in the finished dish.

I started out over a decade ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
