Few fruits feel as magical as the pomegranate. Break one open and you’ll find it packed with jewel-like seeds, each bursting with tart-sweet flavor and loaded with antioxidants, vitamin C and fiber.
To enjoy them easily, score the skin around the middle, gently twist it open and then submerge the halves in a bowl of water. The seeds (arils) sink while the bitter white pith floats, just skim it off and strain. No mess, no stained fingers.
Sprinkle the arils over salads, fold them into grain bowls or eat them by the handful. However you use them, they bring both beauty and nourishment to every bite.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
