Today, I’m thankful for one stunning gift from nature, the watermelon radish, a humble root vegetable with a vibrant secret inside.
With its soft green exterior and brilliant pink center, watermelon radish reminds us that true beauty often lies beneath the surface. But it’s not just beautiful, it’s powerful.
This crisp root vegetable supports digestion, promotes gut health and provides vitamin C and antioxidants that help protect and strengthen the body. Its natural compounds gently support the liver and detox pathways, while its fiber keeps everything moving the way it should.
Sharp yet slightly sweet. Bold yet refreshing.
Watermelon radish brings color, crunch and nourishment to our plates, proving that vegetables can be both stunning and strong.
This Thankful Thursday, we celebrate what’s hidden within, in our food and in ourselves. Sometimes the most vibrant strength is simply waiting to be revealed.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
