This Tasty Tuesday, we’re keeping things crisp, cool and deeply refreshing with a dish that’s as hydrating as it is delicious, Watermelon Mint Salad.
Juicy watermelon meets fresh mint and a splash of citrus in this super simple salad that screams summer. It’s light, vibrant and made entirely from whole plant-based ingredients, perfect for sunny days, picnics or a mid-afternoon pick-me-up.
How to make it:
- Cube fresh, ripe watermelon into bite-sized pieces.
- Add a handful of finely chopped fresh mint leaves.
- Squeeze in some fresh lime or lemon juice.
- Toss gently and let it chill in the fridge for 10–15 minutes before serving.
- Optional add-ins: sliced cucumber, a few berries or a sprinkle of hemp seeds for texture and extra nourishment.
