For this Seasonal Sunday, we’re giving some love to shallots, the delicate, slightly sweet cousins of onions that make everything taste just a little more special. They have that perfect onion-meets-garlic flavor, but softer, rounder and wonderfully aromatic.
I love using raw shallots in dressings, especially in my Poppyseed Magic Dressing, because they add just the right amount of brightness without overpowering anything. They’re also delicious finely sliced into salads, tossed into grain bowls or roasted until they turn silky and sweet. And they are a regular in all of my soups, along with onion and garlic. If you’ve ever been a student of mine, you know this technique.
If you want something simple but deeply flavorful this week, start with a shallot. A little goes a long way.
