Cherry Tomato Hummus Flatbread
Ingredients
- 1 flatbread or naan
- 1/3 cup hummus
- 1 cup cherry tomatoes halved
- Fresh basil or parsley
- Thinly sliced cucumber or arugula optional
- Balsamic glaze for drizzling
Instructions
- Lightly bake or toast the flatbread at 400° until slightly crisp, about 5–7 minutes.
- Spread with hummus and top with tomatoes, herbs and any extra vegetables you’d like.
- Finish with a drizzle of balsamic glaze before serving.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
