Many people think that if they’re eating a salad, they’re automatically making a healthy choice. However, when oil-based dressings, cheese, breaded fried chicken, bacon bits and other high-fat toppings are added, that healthy salad can quickly become something much less nutritious.
In many cases, people are unknowingly sabotaging their own salad.
The good news is that homemade dressings can be flavorful, exciting and even creamy without added oils. Fresh herbs, spices, vinegars, citrus juices and other whole-food ingredients can create delicious dressings that complement your salad rather than overwhelm it.
Though most of my dressings are very light, some do contain cashews or tahini. However, these can be lightened up by blending in some chickpeas, which can replace some or all of the higher-fat ingredients. You’ll still have a creamy, satisfying dressing with plenty of flavor.
A healthy salad should enhance your health, not work against it.

I started out over a decade ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
