Today, I’m especially thankful for my Instant Pot! It has become one of my favorite kitchen tools, especially when I’m teaching my cooking classes.
When I’m working in a client’s kitchen, time is important. What used to take 6 to 8 hours can often be done in just 3 to 4 hours with the help of my Instant Pot. That means less time in the kitchen, more time enjoying the food and a much more relaxed experience for everyone!
I can make so many things in it, from my refried beans for bean burritos to delicious soups and hearty stews. It’s especially helpful when I need perfectly cooked beans or other ingredients ready without spending hours waiting for them to cook.
And it’s not just about saving time, it makes cooking in a client’s kitchen or in my home so much more efficient while still allowing me to prepare delicious, whole-food, plant-based meals.
One of my favorite Instant Pot recipes is my Rice Pilaf, which is simple, flavorful and perfect for showing just how useful this little appliance can be.
What kitchen tool are you most thankful for?

I started out over a decade ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
