Hi There,
For this Savory Saturday, we’re cozying up with one of my favorite blends, Herbs de Provence. If you love potatoes, roasted, air-fried, mashed or skillet-seared, this mix makes them taste next-level. It’s earthy, fragrant and turns even simple roasted potatoes into something you’d swear came from a little kitchen in southern France.
Herbs de Provence usually includes:
- Thyme
- Rosemary
- Savory
- Marjoram
- Oregano
- Basil
- And sometimes lavender (my favorite) for a soft floral note
This blend originated in the Provence region of France, inspired by the wild herbs that grow there. It’s rustic, comforting and absolutely perfect with potatoes. It clings beautifully to roasted edges, adds depth to mashed potatoes and brightens up even a simple potato skillet.
If you try it this weekend, hit reply and tell me how you used it.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
