Berry Chia Jam

Ingredients
  

  • 2 cups fresh strawberries blueberries, raspberries or a combination
  • 1 tablespoon water
  • 2 tablespoons chia seeds
  • 1 –2 teaspoons maple syrup or date syrup optional
  • 1 teaspoon lemon juice optional

Instructions
 

  • Add the berries and water to a small saucepan over medium heat.
  • Cook for 5–8 minutes, stirring occasionally, until the berries soften and release their juices.
  • Lightly mash the berries with a fork or potato masher.
  • Stir in the chia seeds, maple syrup or date syrup (if using) and lemon juice.
  • Remove from heat and let the mixture sit for about 10–15 minutes to thicken.
  • Serve on whole grain or gluten-free toast or crackers.
