Ingredients:

  • 1 ripe mango (or 2 cups frozen mango), blended until smooth
  • ½ cup chia seeds
  • 2 cups unsweetened plant milk (oat or almond works great)
  • 1 tbsp maple syrup or date syrup (optional)
  • Pinch of salt
  • Shredded coconut or fresh thawed mango chunks for topping
Instructions:
  • Whisk together chia seeds, plant milk and maple syrup in a jar.
  • Let it sit for 5 minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours (or overnight for best texture).
  • When ready to serve, layer with blended mango and top with coconut flakes or thawed mango chunks.
