Happy Savory Saturday! This weekend, we’re celebrating one of the simplest, most transformative ingredients in the savory kitchen: caramelized onions.
When onions are slowly cooked down, they lose their bite and develop a rich, sweet depth that’s perfect for layering flavor. It’s a quiet kind of magic—just time, heat and patience.
Here are a few favorite ways to use them:
- Spread on toast with hummus
- Bean burger topping
- Stirred into risottos, soups or hearty grain bowls
- Tucked into wraps and sandwiches for a golden, savory lift
- Layered into plant-based savory pies
And of course, my Rustic Cauliflower Casserole wouldn’t be the same without them. The caramelized onions bring comfort and depth to every bite. (Just hit reply and I’ll make sure you get it!)
Pro tip:
No oil needed—just a nonstick pan, a splash of broth or water and a little stirring love. Make a big batch and freeze extras in small portions for instant flavor boosts.
Wishing you a savory and soul-warming weekend.

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
