Happy Tasty Tuesday! If you’re looking for a simple, nourishing breakfast that you can prep once and enjoy all week, you’ll love this steel cut oats recipe straight from my Instant Pot.
Recipe
- 2 cups steel cut oats
- 2 cups plant milk (I use oat)
- 4 cups water
Instructions:
- Stir in all ingredients into the Instant Pot, set to manual 15 minutes.
- Once the time is up, let natural release for about 10 minutes.
- Enjoy with fresh or frozen berries, banana, etc. Top with a pinch of salt and a drizzle of maple and enjoy!
(These oats can be individually packed and frozen up to 2 months).
Steel cut oats are a superstar for gut health thanks to their high soluble‑fiber content (beta‑glucan), which feeds your beneficial gut bacteria and helps keep blood sugar steady. They’re also rich in plant‑based protein, magnesium and iron. And here’s a little secret not many know, oats contain unique antioxidants called avenanthramides, which boast anti‑inflammatory and heart‑protective properties you won’t find in most other grains.
Want to switch things up? These oats make a comforting savory porridge, too. Simply cook them in vegetable broth instead of water, then stir in garlic powder, nutritional yeast, sautéed mushrooms and fresh herbs for a warm, savory twist.
Enjoy discovering all the ways steel cut oats can fuel your morning, sweet or savory!
With whole‑food love.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
