The best part? These tacos don’t need cheese, oil or sour cream. Just roasted sweet potatoes, black beans, your favorite seasonings and maybe a little fresh cilantro or lime to brighten things up.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
