Today I’m feeling especially grateful for one simple, nourishing ingredient that doesn’t get nearly enough attention, Farro.
This ancient grain has a beautifully chewy texture, a subtle nutty flavor and the kind of heartiness that makes a meal truly satisfying. It’s rustic and perfect for building bowls that feel both wholesome and comforting.
I’ve used this as a base for my Mediterranean Bowl for over a decade, layered with vibrant elements and bold flavors that come together in the most balanced, delicious way.
It’s one of those meals that feels nourishing, colorful and deeply satisfying all at once and one of my favorites that helped me lose nearly 50 pounds.
If you’d like my Mediterranean Bowl recipe, just reply to this email and ask for it, I’ll send it straight to your inbox.
Grateful for you and this community.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
