Have you ever seen celeriac, also known as celery root, at the farmers market or grocery store and wondered what to do with it?
This knobby-looking root vegetable may not win any beauty contests, but don’t let its appearance fool you! Celeriac has a mild, slightly nutty flavor with a subtle celery taste, making it a delicious and versatile addition to your kitchen.
Celeriac is a good source of fiber, vitamin K, vitamin C and several minerals, making it a nutritious addition to a whole-food, plant-based diet.
So, how do you prepare it?
Start by cutting off the top and bottom, then use a vegetable peeler or sharp knife to remove the thick, rough skin. Once peeled, you can slice, dice, grate or cut it into cubes, depending on how you’d like to use it.
Try roasting cubes of celeriac with your favorite herbs and seasonings, adding it to soups and stews, grating it into salads or even mashing it as a delicious alternative to traditional mashed potatoes.
Sometimes the most unusual-looking vegetables can turn out to be some of the most versatile!
