For this Seasonal Sunday, we’re shining the spotlight on a leafy green that’s been keeping a big secret. You’ve seen it, you’ve probably eaten it, but did you know this plant has four different names? Meet Dinosaur Kale, also known as Lacinato Kale, Tuscan Kale and its dramatic Italian stage name, Cavolo Nero. Yes, one single vegetable with more identities than a spy movie. The “dinosaur” nickname comes from its dark, bumpy leaves that look straight out of the Jurassic era.
Despite its identity crisis, this kale is one of the most nutrient-rich greens you can bring into your kitchen. It’s packed with vitamins A, C and K, fiber, antioxidants and has a naturally softer, sweeter taste than curly kale.
Ways to try it:
- Massage into salads for a tender bite
- Sauté with garlic
- Add to soups and stews (it holds up so well!)
- Bake into crispy kale chips
- Toss into bowls or pasta for a hearty green boost
A plant with many names and even more delicious uses.
