Rice cakes! Here’s a brand that really has something for everyone, Lundberg Family Farms.
They do such a great job with variety. The Lightly Salted Brown Rice Cakes are simple and clean, the Tamari Seaweed Rice Cakes bring that deep, savory, umami flavor and if you want something sweet, the Cinnamon Toast Rice Cakes have that warm, slightly sweet crunch that really satisfies.
I like to keep toppings light but still flavorful.
For something savory, I’ll add one of my bean dips on top, my creamy white bean dip works really well here, especially with the tamari seaweed flavor. It just adds that extra layer without making it heavy.
For something sweet, the cinnamon rice cakes are honestly great on their own, but I’ll sometimes add a little plant-based hazelnut spread and a sprinkle of ground nuts or seeds. It just makes it feel like a treat without overdoing it.
It’s simple, but it doesn’t feel basic and that’s kind of the whole point.
