This Friday fave is all about edamame, but with a little more flavor and texture to keep things interesting.
Roasting gives the pods a slightly crisp, blistered edge while keeping the inside tender. Brushed with a light layer of citrusy chili flavor (like a ponzu-style sauce) and finished with a touch of something bright, like lime or celtic salt, it turns into a snack that’s simple but far from boring.
It’s still the same hands-on experience, popping them out of the shells one by one, but with a more bold, satisfying finish.
Roasted Edamame (Serves 2)
Ingredients:
- 2 cups edamame in pods (thawed if frozen)
- 1–2 tsp ponzu or citrusy chili-style sauce
- ½ tsp lime or celtic salt (or a simple seasoning blend)
Instructions:
- Preheat oven to 400°F (200°C).
- Pat edamame dry and place on a baking tray.
- Lightly brush or toss with ponzu-style sauce.
- Roast for 12–15 minutes, until slightly blistered.
- Remove from oven and sprinkle with lime or celtic salt.
- Let cool slightly and enjoy by popping beans out of the pods.
