Sweet corn and zucchini are two of summer’s greatest gifts.
Together they create a creamy, comforting chowder without any dairy, making it perfect for a light summer lunch or dinner.
Simple, fresh and full of seasonal flavor.
Sweet Corn & Zucchini Chowder
Ingredients:
- 3 cups fresh corn kernels
- 2 medium zucchini, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups water
- Salt and pepper to taste
- Fresh parsley, basil or chives for garnish
Instructions:
Add the onion to a pot with a splash of water and cook until softened. Stir in the garlic, zucchini, corn and 3 cups water. Simmer for 15–20 minutes, until the vegetables are tender. Blend about half of the chowder until creamy, then stir it back into the pot. Season with salt and pepper and garnish with fresh herbs before serving.
A great way to enjoy two of the season’s most abundant vegetables.
