Fennel bulbs might look a little unusual with their pale green layers and feathery fronds, but they’re one of the hidden treasures of fall produce. Raw, fennel is crisp with a light licorice flavor, but when you roast it, something magical happens, it softens, caramelizes and turns sweet and mellow.
It’s one of the easiest ways to enjoy fennel, just slice, season with your favorite herbs and roast until golden. No complicated recipe needed, just the oven doing its work. Roasted fennel pairs beautifully with grains, beans or my favorite, roasted garlic mashed potatoes as a simple side dish that feels both comforting and elegant.
Seasonal eating doesn’t have to be complicated. Sometimes, all it takes is letting a vegetable show off what it can do on its own.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
