Seasonal Sunday is about slowing down and letting what’s in season nourish us, naturally and gently.
This week, we’re spotlighting golden beets.
Golden beets are naturally sweet and mellow, offering all the goodness of beets without the strong earthy intensity many people shy away from. Their soft golden color brings warmth to winter plates when everything outside feels cold and muted.
As a true winter root, golden beets are traditionally valued for supporting circulation and gentle detoxification. They pair beautifully with the season’s needs, nourishing and easy on digestion.
Roasted, steamed or lightly sautéed, they remind us that winter food doesn’t need to be heavy to be deeply satisfying.
Let this Sunday be simple. Let the season lead. And let golden beets bring a little quiet glow to your table.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
