Savoy cabbage is one of those quiet vegetables that doesn’t shout for attention, but rewards you when you notice it.
Raw, Savoy is surprisingly gentle. Its crinkled leaves are tender rather than tough, with a fresh, lightly sweet, green flavor and just a hint of peppery bite. Unlike regular cabbage, it lacks that sharp sulfur edge, making it feel lighter and easier on the palate.
Sautéed, it transforms completely. The leaves soften quickly, becoming silky and almost buttery, while the flavor deepens into something sweet, nutty and savory. It’s comforting without being heavy, warming, but never overwhelming.
