Cherry Ginger Granola
Ingredients
- 4 cups rolled oats
- 1 T ground flax optional
- 1 T chia seeds optional
- 1 tablespoon ground ginger
- ¼ cup pecan pieces
- 1 cup unsweetened applesauce
- 1 T maple syrup
- 1 teaspoon vanilla extract
- ¼ cup dried cherries
- Pinch of salt
Instructions
- Mix all dry ingredients in one large bowl.
- Mix the wet ingredients together.
- Combine the two and mix well, ensuring that the oats are covered and moist.
- Spread onto a parchment-lined cookie sheet.
- Place in a preheated 340°F oven for 30 minutes, mixing halfway through.
- Remove from oven after 30 minutes, add in the dried cherries and give it a toss. Allow to cool.
- It will get a little crisper as it cools. If you prefer it to be a little more crunchy, leave it in another 5 minutes, keeping an eye on it.
- Once completely cooled, place in a glass jar or airtight container and refrigerate for up to 4 weeks.
